Convection ovens utilize a different technology that cooks food faster and more evenly. It uses a fan to push and circulate the warm air around the food that's being cooked. The warm air cooks it more thoroughly and does it in twenty percent less time and at temperatures lower by about twenty degrees than conventional ovens. For busy cooks this is an excellent option. Professional chefs prefer convection ovens and have been recommending them for at-home use. They are more expensive than conventional ovens but are worth it in the long run. Also, some models that can be switched from conventional to convection upon demand. It is not necessary to replace the conventional oven altogether. There are smaller, counter models that work just as well and are less expensive than full size ones. Cadco makes quarter and half size versions of its full size convection ovens. The quarter size model is about the size of a regular microwave. These smaller models have three shelves and can easily hold a 2 1/2 inches deep pan and a quarter size of a baking sheet. They are excellent for preparing small meals. Half size models have three or four shelves that can hold about half of a baking sheet. They have either dial or digital time and temperature controls. Some models offer humidity control. Digital models are programmable and allow up to seventy programs to be saved in their memory. All Cadco models come with a 10-hour continuous timer. They have reinforced double glass doors for safety. A unique switch shuts the oven off when the door opens during the cooking cycle to prevent burns. Cadco convection ovens will fit on a regular size counter. If the counter space is limited, there is an option of a cart for convenience and portability. They are also small enough to be set up or stored in a kitchen cabinet. Cadco convection ovens can be found online or in some stores that sell kitchen appliances.
